If we are cooking with kids, my son would take basketball shots with stuff that goes in the pot (fun but sometimes messy). When we get home, we set the table and eat. Time wise, crock pot cooking makes for a great meal.
Another tool we get more out of is the food processor. Several times a year, I will take two entire days to cook. I pull out the food processor and slice, dice and chop. I put together healthy easy recipes, bag them, and put them in the freezer. I do a month’s worth of cooking all at one time. Each night for the next month, I can just pull an easy cooking recipe out of the freezer and it’s hot and on the table in about 20 minutes.
No, this is not as fast as serving from the crock pot. It does take some planning. For a few weeks prior to my cooking adventure, I know what I need to buy in terms of meats and vegetables. I shop every sale. When my days of cooking arrive, I am stocked up with everything I need and I planned it, got it on sale. I take my food processor and go to town. There is no more day to day wondering of what to cook and by planning out my month worth of meals, I save time every day and have saved money at the store. My grocery shopping for a month is mostly bread, milk, and eggs.
The other thing we do to make easy cooking a reality is limit what goes into a meal. What do I mean by that? We almost always use quick and easy recipes that have few ingredients. My personal cooking book includes a lot of recipes I have acquired over the years and then simplified by reworking the recipes until they only have four five ingredients. The fewer ingredients I have to worry about, the more easy dinner recipes I collect. My other consideration in this is that I am cooking for kids, so I want to make sure these are healthy easy recipes as well.

You need to be flexible in making gravy from stock, so that it will be of perfect thickness and consistency.) 1/4 cup cornstarch (have more available for adjusting thickness) 1 cup cold water (have more available for adjusting thickness) salt, if needed Spoon off all excess fat from the top of the turkey stock. Strain the stock, in order to remove scraps left from the roasting procedure. Place the stock in a medium-sized saucepan. Mix 1/4 cup cornstarch with 1 cup cold water, and add to turkey stock. My mother was of the idea that a man’s place was never in the kitchen, and this was ingrained into us as she shooed us out of the kitchen every time whenever we tried to get into the kitchen to see what was cooking. Disadvantaged as we were in cooking for ourselves, it made us more aware of the beauty in mum’s cooking. Mum’s prepared food that was absolutely marvelous, both in taste and smell. Meals prepared by her were never ordinary. They were a delight to behold, a pleasure to consume – no matter how simple the dish was.
Now in her twilight years, mum can no longer cook for herself. She has bouts of amnesia, and old age has taken a severe toil on her. Dependent on others to cook and serve her meals, she can sometimes struggle to the kitchen and still manage to prepare a ten minute fast cooking instant noodle, much to our chagrin and anxiety. The doctor orders were not to let her near a stove for fear of a fit or a fall, lest she burn the house down.
Just yesterday, in the quiet of the night, I was able to recall times I had with mum when I was about to go to college. Vivid in my mind, as history started to flash back, I remembered words of wisdom from mum on cooking. We were always profuse in our praise and bountiful in our appreciation for mum’s fantastic cooking. And on one occasion, she revealed the secret formula that had always enveloped the food she cooked.

Throughout the years when I had to cook, her words of wisdom flashed back to me whenever I despaired over my cooking. I had seen my cooking improved, and had added more styles and recipes to vary my cooking in the later years.
“And the secret ingredient in all Chinese cooking is to add a little bit of inner joy to your dish as you cook. When you approach your cooking with this little bit of inner joy, you will have a song on your lips as you cook. Something mysteriously will spur you on to do your best and turn on the magic in your cooking,” she added.
That day, last week, when I recalled those words of mum when I prepared a meal for her, I could only add not just a little bit of inner joy, I tried my best to give her a physical massive hug of love.

What Could be better than David Kaiser SOBA Noodle Experts Newest Find!
While scanning the search engines for new and fabulous ways to make SOBA noodles I came across another recipe that I just had to share.
Dried pasta, garlic powder, olive oil, and Parmesan cheese – the ingredients that made up the backbone of my sister’s college pantry. Toss hot, cooked noodles with a glug of olive oil, a big shake from the green can, a dusting of garlic powder – this was lunch. Not the most nutritious lunch mind you, but lunch none the less. I woke up the other morning craving these garlicky noodles and started to think about what an updated version might look like – preferably one that stepped up the game on the nutrition front. I opted for buckwheat soba noodles in place of spaghetti noodles, threw in some greens for color, kept the Parmesan (now freshly grated), and served the noodles along side Parmesan-crusted tofu. That being said, you could certainly opt for another favorite protein source to balance out the plate.
Garlic Soba Noodle Recipe (This recipe should be followed as closely as possible) David Kaiser SOBA Noodle Fan
I seek out (and tend to stockpile) Organic Planet soba noodles – they are thinner than many of the other brands on the market and made from a buckwheat / wheat flour blend. I like the way they behave after I’ve cooked them – they aren’t prone to sticking or clumping. The powdered garlic I use is simply dehydrated garlic that has been ground. It has a harsher flavor than most fresh garlic you’ll encounter, and the fragrance it puts off is different as well. I feel a bit of nostalgia for it, and actually like to use it for certain recipes (like this one). Feel free to toss in a few fresh cloves (chopped) in its place if you prefer. In that scenario I’d add the fresh garlic just before the chard.
8 ounces dried soba noodles
3/4 cup bread crumbs
1/4 cup Parmesan freshly grated
big pinch of salt
12 ounces extra firm organic tofu, cut into 6 rectangular slabs
2 eggs, lightly beaten
a generous splash of olive oil
1 bunch green onions, greens trimmed, thinly sliced
4 big handfuls of chard, spinach or kale – destemmed and cut into bite-sized pieces
1 teaspoon garlic powder
1/2 cup Parmesan, freshly grated
a few baby radishes, sliced paper thin
Boil a large pot of water and cook soba noodles per packet instructions or until just tender. I like to salt my water generously as I would other pasta. Drain and set aside.
While the water is coming to a boil, get the tofu started by combining the bread crumbs, Parmesan and salt in a shallow plate. Dunk each piece of tofu in the egg and then press into the bread crumbs. Make sure each piece is nicely coated with crumbs. Place each piece on a parchment-lined baking sheet and repeat with the remaining pieces. Bake in a 375 degree oven or pan-fry in a skillet in a bit of olive oil until both sides are golden, flipping once along the way. Slice into strips and set aside.
Add the olive oil (and bit of salt) to a large skillet over med-high heat. Stir in the green onions, chard, and cook for a minute until the chard collapses. Stir in the soba noodles. Stir in the garlic powder and Parmesan. Remove from heat. Sprinkle with sliced radishes. Serve family-style or on individual plates – each nest of noodles topped with some of the tofu slices.
Serves 4-6.

Growing up My parents were huge dinner cooks, they always loved cooking with each other and getting us kids involved which in turn I grew up with a passion for Cooking.
One of my favorite dishes that were always cooked was SOBA Noodles. Which Soba noodles are Japanese thin noodles made of at least 30% buckwheat. Since buckwheat has a tendency not to adhere closely, soba noodles also include regular wheat flower. Soba noodles look very much like Spaghetti noodles except them are a light brown in color. They are quite popular in Japan and gaining popularity in many other places. They also form the basis for many traditional Japanese dishes.
Soba noodles can be served hot or cold. They often form the basis for traditional cold dishes, including soba topped with Japanese yams, daikon radishes, sliced okra, or fermented soybeans. Hot soba noodles are frequently served in soup. In particular, hot tsuyu is a thinned version of cold tsuyu that serves as a dipping sauce for cold soba noodles.

Easy Salad: Sesame Soba Noodles
We took this Japanese recipe up a notch. Full of antioxidants, it’s gluten-free and tasty too. Prep: 10 min Cook: 6-8 min
Mighty soba should be known as the Japanese longevity noodle (why does that sound dirty?).
This Japanese recipe has noodles that are chock-full of a potent antioxidant called rutin, which has been shown to improve circulation and prevent LDL cholesterol from clogging blood vessels. Got a tummy that can’t tolerate wheat? Soba noodles made with naturally gluten-free buckwheat flour will go down without a hitch. With this easy salad, feel free to slurp these noodles noisily–in Japan, it’s considered polite (plus, it’ll cool them down).
8 oz soba noodles
1 c frozen shelled edamame
1 1/2 c shredded carrots (such as Ready Pac)
1 1/2 c thinly sliced scallion
1/2 c chopped fresh mint
1 large orange
2 Tbsp white miso
3 Tbsp sesame oil
2 Tbsp low-sodium soy sauce
1/2 tsp crushed red-pepper flakes
1/4 tsp salt
1. Fill a 6-quart saucepan with water and bring to a boil. Add noodles and edamame and cook for 6 minutes.
2. Empty into a colander and rinse well with cold water. Drain and place in a serving bowl. Stir in carrots, scallion, and mint; toss gently and set aside.
3. Grate orange to produce a half teaspoon fine zest. Juice orange to produce 3 tablespoons liquid. Place zest and juice in a small bowl and whisk in remaining ingredients. Pour dressing over noodle mixture.
4. Toss gently and refrigerate for 30 minutes to allow flavors to blend. Serve cold or at room temperature.
Makes 6 servings. Per serving: 268 cal, 9 g fat (1.1 g sat), 513 mg sodium, 36 g carbs, 4 g fiber, 10 g protein

If you are diagnosed as yeast intolerant then you will usually have to start a yeast free diet. The diet will include bread and other yeast products. This can leave quite a gap in the daily diet as bread is considered a staple food in many countries especially Europe, North America and Australasia.
There are in fact two reasons why bread is not part of a yeast free diet.
You would think that the use of yeast as a basic ingredient would be the cause but this is not necessarily so. Although it is a factor, the main reason is the sugar that is added to help the yeast grow which makes the bread rise. The other reason is that wheat flour has a high gluten content. Gluten is the starch that holds the bread together after cooking. Although the body needs starches to help the production of beneficial bacteria they can also be obtained from potatoes and rice.
There are many different type of flour available to substitute the use of wheat flour however, most of them do not have the gluten content that wheat flour has. It may be necessary to combine two or three types of flour to obtain the texture that you want. When buying the flour be sure to read the ingredients. Generic flours like cake flour, bread flour or self raising flour are normally made from wheat flour. Some other popular flours are from cereals which are derivatives of wheat.

Because yeast is a rising agent then there is a major problem in trying to make anything that will resemble a loaf of bread. The chances are that you are never going to succeed and need to move on. It is possible to make unleavened bread which is a good substitute. You can add herbs to it to make it a little bit special and use vegetable margarine. Again check the label for additives.
Another option as a rising agent is baking soda or baking powder. This is normally used in scones and small cakes. It will give a light airy texture and is better for small bread type rolls.
Here is a quick recipe for wheat free bread:
Cornmeal, 1 cup
Shortening, 1 tbsp
Egg, 1
Baking powder, 1 tsp
Salt to taste (Use untreated sea salt if available)
Preheat the oven to 375F. Line the baking pan with paper and then dust it with a little flour. Place the cornmeal, salt and shortening in a large container and gently mix together. Add a little bit of boiling water, and stir until you have a smooth batter. Beat the egg and fold it into the batter. Add the baking powder and stir. Pour the mixture into the baking pan and bake for 20 – 25 minutes. Cool the loaf of bread on a baking tray and serve. You could also use a muffin tray and papers to make bread rolls.
Loaves of bread and bread roll are something we all grow up with and it is very difficult to actually cut them from your diet. The texture and taste of any substitute is going to be very different but with a little imagination and practice you may even get to prefer it.

When we talk about a yeast free diet we don’t actually mean a diet without any yeast. The purpose of a yeast free diet is to stop eating foods that feed the natural yeast type fungus in our bodies. The yeast is known as candida with the most common being candida albicans. A yeast infection can occur anywhere on the body but a yeast free diet can help wherever it appears. The yeast will feed on sugar in the bloodstream if necessary. Usually a strict diet will also prevent the return of an infection.
The list of food not allowed on the diet is quite long but the foods that are allowed are considered healthy foods. Many food manufacturers are realizing that people are becoming more conscious about what they eat and are providing alternatives for a range of common ingredients. Without going into a full blown list of what you can and can’t eat, if it isn’t mentioned here then the chances are that it is a banned food.
A recommended meal on a yeast diet is an equal portion of meat or fish to vegetables with approximately 20% of carbohydrate, rice or potatoes. Meals should be taken 4 – 5 times daily. This will help the body sugars to balance out and reduce the initial cravings. When you start the diet the yeast will react and demand to be fed, this is where the cravings come in. It may be for sugar, bread or beer. It’s because of this that alcoholism has been linked to yeast infections.

All meats are safe to eat as is fish. Organic meat and fish is highly recommended. Farm bred meat and fish are fed with growth hormones and antibiotics which are then transferred to us. The meat can be roast, grilled, stir fried or minced for patties. Fish can be boiled, grilled, or fried. In fact the way you normally prepare the meat part of your meal doesn’t have to change that much.
Eggs are extremely versatile when it comes to cooking. An omelet is always an easy way out when you are stuck for ideas. You can add fish or chicken with any vegetables you choose. Serve with rice or potatoes on the side.
For vegetables you can eat virtually anything although leafy green vegetables are best. Again fresh organic vegetables are best because of pesticides used in cultivation. Vegetables can be steamed, stir fried or raw. Tomatoes contain a lot of natural sugar and should be avoided. Fresh vegetables can also be used as snack food if you feel really hungry.
Carbohydrates will come in the form of rice and potatoes. Pasta and noodles are not allowed although there are some rice varieties of these on the market now. Read the label to be sure because wheat products are not allowed.
Sauces and flavorings are a major addition to any meal and there are still plenty of ideas you can use. A salad dressing with lemon, olive oil and unfermented apple cider vinegar is great for salad. Fermented vinegar and products that use it are not allowed. Fresh vegetables can be spruced up with fresh herbs or chopped nuts (not peanuts). Meat juices can be thickened with cornflour or arrowroot and flavored with any fresh herbs. Garlic is considered especially good for yeast infections.
For a drink you are pretty much reduced to water, distilled or carbonated but preferably non chlorinated. All fruit juices, pop, and alcohol are not allowed. Tea and coffee are not allowed except for some herbal teas. Milk, while not banned, has been found to contain growth hormones, pesticides and antibiotics which are valid reasons not to use it.
Among the other considerations are time. Time to shop for, prepare and cook your meal. Also, who is going to eat the diet, are you on your own or are you involving family members. With planning and a little imagination, a yeast free diet shouldn’t cause too many problems.

Lactose Intolerance
Lactose is a sugar found in milk and milk produces. Lactose intolerance is the inability to digest lactose. In the small intestines the enzyme, lactase is deficient in breaking down lactose into two simpler forms of sugar forms glucose and galactose. When lactose is broken down into glucose and galactose it is allowed to absorb into the blood steam. Lactose intolerance develops over time and many do not show symptoms until early childhood or earlyLactose intolerance is less common in northern and western European. It is more common in Africans, African-Americans, Native Americans and the Mediterranean populations.
Milk Allergy
Milk allergy is a reaction of the immune system to one or more milk proteins. The immune system mistakenly creates antibodies to fight the milk proteins. The antibodies create chemicals in the body that can result in skin rashes, headaches, nausea and or wheezing. Lactose intolerance and cow milk allergy are not the same. One most common allergy that children have is milk allergy. In some instances, some that are allergic to cow’s milk may also allergic to goat, sheep, buffalo and soy milk. Milk allergy is most common in cow’s milk. Milk allergies can appear in the first year of life. Lactose intolerance is the digestive systems inability to digest lactose. Milk allergy is an immune system disorder. If you have lactose intolerance or are allergic to milk it is recommended that you restrict or if possible eliminate dairy products from your diet. Consult with your doctor specialized in lactose intolerance and milk allergy for professional consultation. You can still enjoy your favorite meals but they have to be prepared differently.

Roast Pumpkin & Red Onion with Rosemary
Ingredients
½ butternut pumpkin, seeded and sliced
4 red onions, peeled and sliced
4tbs rosemary leaves, chopped
4tbs olive oil
Instructions
Pre-heat oven to 180 degrees celsius, fan-forced.
Line a baking tray with baking paper. Place pumpkin, onion and rosemary leaves on the baking tray and coat with olive oil.
Place tray in the oven and bake for 15-20minutes or until pumpkin has cooked and onions have browned. Serve.

You will not be dieting, you will be changing ingredients and you will give in to some changes without turning your nose up before trying. It took a long time to put that weight on, it will come off, but not in 6 weeks like the skinny models on your TV screen. Have patience! Don’t have the mindset of a dieter. Remember, you are not starving. You are eating delicious, tasty food.
My husband was 241 lbs. and had a triple bypass six years ago. Today he weighs 178 lbs. and his cholesterol is 108. I never lied to him about his food; I just neglected to mention that I did things like replacing the ground beef in his chili with veggie protein crumbles (from the frozen food case) and the shredded cheddar was veggie cheese from the supermarket produce department. Believe it or not the shredded veggie cheddar tastes and melts so much better than the regular no-fat cheddar. He loves it! I finally had to tell him why he was losing so much weight. He was beginning to think there was something terribly wrong with him.
I bought a cook book with lots of creamy comfort foods that he always craved. None had the heavy cream, butter and cheese that comfort food usually has. I learned how to substitute fat-free half & half or evaporated skim milk for cream. I used margarine with no trans-fat and after a while, I didn’t need a special cookbook. It was easy to convert any recipe to low fat, low calorie, low anything.
Here’s a good example of a recipe conversion: Original recipe was made with veal not chicken. I used healthy olive oil and margarine, reduced both to 1 1/2 teaspoons. The half-and-half was replaced with the fat free kind.
Chicken in a Creamy Mustard Sauce:
2 chicken breasts (boned & skinned)
1 1/2 tablespoon flour
1/4 teaspoon each salt & pepper
1 1/2 teaspoons each olive oil & margarine
1/2 cup each diced onion & sliced mushrooms
1/4 cup fat-free half-and-half or evaporated skim milk
1 tablespoon each Dijon & fresh parsley
1 1/2 teaspoons lemon juice
Dredge chicken in flour, salt, & pepper. In a non-stick skillet heat oil over medium heat, add chicken and cook, turning once, until browned on both sides and cooked throughout (about 2 minutes per side). Remove chicken.
In same skillet heat margarine until bubbly; add onions & mushrooms. Sauté until lightly browned. Reduce heat, add half-and-half, mustard, parsley and lemon. Stir constantly until sauce comes to a boil and thickens. Serve over the chicken.
Learn this method of good eating; forget the fad diets and the pills. Stop killing your husband and the kids with what you think is kindness cooking. Serve more vegetables and salad. Get healthy and then look in the mirror and be proud of your accomplishment!

Lemon Chicken Pasta Recipe
(serves 4)
Ingredients
350g pasta twirls or shapes
450g cooked chicken
25g plain flour
150ml single cream
1 tbsp French mustard
300ml chicken stock
25g butter
1/2 lemon (juice and grated rind)
salt and pepper
Method
Firstly chop the chicken into small pieces. Cook pasta in boiling water as per instructions. Melt butter in a saucepan, add flour and cook, stirring for 1 minute. Remove from heat and stir in stock gradually. Place pan back on heat bring to boil, stirring all the time until thickened. Next add the French mustard, cream, lemon juice and rind to the sauce, season to taste, and heat gently. Drain pasta, serve in dishes, pour sauce over pasta. Perfect.
Saucy Chicken Drumsticks Recipe
(serves 4)
Ingredients
8 free range chicken drumsticks
1 tbsp olive oil
2 tbsp Worcestershire sauce
2 tbsp tomato sauce
4 drops of Tabasco sauce
Method
